Couscous with Carrots and Celery

You’ll Need
- 3/4 cup uncooked couscous
- 2 finely chopped carrots
- ¼ cup finely chopped onion
- 2 finely chopped celery stalks
- 1 tablespoon butter or olive oil
- ¼ teaspoon salt
- Fresh ground pepper to taste
- Finely chopped parsley to garnish (optional)
Directions
Prepare couscous: boil 1 cup water, add couscous and salt to boiling water and turn off heat; cover pot and water will absorb. After water is absorbed mix in ½ tablespoon butter.
- While couscous is preparing, chop all vegetables and sauté in other ½ tablespoon of butter for approximately 10 minutes (or until softened).
- Next mix couscous and vegetables together.
- Adjust salt and pepper.
- An option is to top with finely chopped parsley.

- Add in a ½ teaspoon of cumin
- Add in a pinch of sage and rosemary
