Cabbage, Carrots and Potato Medley

Ingredients
- 3 1/2 teaspoons olive oil, divided
- 2 cloves garlic, minced
- 2 teaspoons minced ginger
- 1/2 cup chopped onion (about half a medium onion)
- 1/3 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1/3 teaspoon cinnamon powder
- 1/4 teaspoon cloves powder (6 cloves)
- 1/3 teaspoon black pepper
- 1 large carrot (about 3/4 cup, sliced)
- 2 medium potatoes, chopped
- 1 head of cabbage, loosely chopped (You can also use just half the cabbage. The less you use the more intense the spice flavors will be).
- 1 teaspoon salt
- 1 Tablespoon water
Directions
- In a large skillet or pot that can be covered, add 1 3/4 teaspoons oil and heat at medium-low. Once hot, Add garlic, ginger, and onion. Mix, cook for approximately 4 minutes.
- Add the cumin, turmeric, cinnamon, cloves and black pepper. Mix and heat for 3 minutes to infuse the oil.
- Next add the carrots, and potato and mix well.
- Add cabbage a 1/2 teaspoon salt, and 1 tablespoon water. Mix well, cover and cook for 15 minutes. Stir once around 7 minutes.
- Add another 1/2 teaspoon of salt, and the rest of the olive oil and mix. Then cover and cook for another 10 to 15 minutes or until the potatoes are tender.
