Mission Impossible Asparagus
Your mission, should you choose to accept it, is to make this crazy good side dish for you and your family. When you do, you’ll discover how easy it is to throw together.
But then, part two of your stealthy mission will be to do the impossible and get your family to not only eat this delicious side dish, but also to love it so much that they literally ask for it by name.
You’ll Need:
- 1 pound (500 g) asparagus spears, woody ends removed
- 3 tablespoons olive oil
- 1 tablespoon minced garlic (or 4 cloves garlic, minced)
- 3/4 teaspoon Kosher salt
- 1/4 teaspoon fresh cracked black pepper
- 1 cup shredded parmesan cheese
What To Do:
Preheat oven to 425°F (220°C).
Combine the olive oil, garlic, salt and pepper. Set aside.
Line up asparagus next to each other on a baking sheet (line with foil first, for easier clean up).
Add the oil mixture to the asparagus and toss to evenly coat.
Bake for just 10 minutes until vibrant. It should be just a bit under done because you’ll finish cooking after you’ve added the cheese.
Remove from oven and top with the parmesan cheese. Return to oven and broil (or grill) until the cheese melts and becomes golden (5 or so minutes).
As the food maker, it’s your responsibility to taste and correct seasonings (bummer, right?). So adjust salt and pepper, if needed and you’re ready to go.
You want to serve these right away while they’re still hot.
