Jamaican style spicy slaw

Jamaican style spicy slawHealth authorities always tells us to eat fruits and veggies, and especially cruciform vegetables like broccoli, Brussels, and cabbage.

It’s not always easy to get all those veggies in all the time. And sometimes we can feel like we just need other ways to prepare them so we’re not serving our family the same stuff in the same way all the time.

That’s why this recipe is such a refreshing new way to pull in the key super foods like cabbage, carrot, and even pineapple!

You’ll Need:

4 cups cabbage, finely shredded (the more finely you can shred this, the better)

2 cups carrot, finely shredded (the more finely you can shred this, the better)

1 1/2 cups pineapple, diced

1/2 cup raisins (optional)

 

For The Dressing

2 Tbsp Dijon mustard 

1/3 cup apple cider vinegar

1/3 cup extra virgin olive oil

1 tbsp pickled jalapeño

1/4 cup green onion, chopped

1 tsp  salt

1 tsp pepper

 

What You’ll Do:

Place all of the slaw ingredients in a large mixing bowl, from the cabbage through the raisins (if using).

 

In a separate bowl, mix the dressing components, from the mustard through the pepper until smooth.

 

Toss the dressing onto the slaw and mix until the slaw completely covered throughout. This is now ready to serve!
