INGREDIENTS

  • 3 Roma tomatoes diced
  • 2 ripe avocados diced
  • ½ cup red onion diced
  • 15 oz black beans rinsed/drained
  • 15 oz black eyed peas rinsed/ drained
  • 1 ½ cups frozen sweet corn or thawed if eaten right away.
  • 1 bell pepper diced
  • 1 jalapeno pepper remove the seeds dice into very small pieces
  • ½ cilantro chopped

DRESSING

  • ½ cup olive oil
  • 2 Tablespoons  lime juice
  • 2 Tablespoons red wine vinegar
  • 1 Teaspoon sugar(optional)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder

 

DIRECTIONS

  • In one bowl combine all ingredients and toss/stir well
  • in a separate bowl whisk together the DRESSING ingredients
  • Then pour the dressing all over the other ingredients and stir/toss well
  • If not eating right away store in the fridge,
  • Serve with tortilla chips
