Double Chocolate Happiness Muffins

happy child eating cupcake batterYes, dreams do come true, right after you toss these together these double chocolate muffins and pull them out of the oven.

And any leftover chocolate in the bowl will just have to get cleaned up by the troops who, I’m sure, will be more than happy to help out!

The happiness I get from these muffins do come from the chocolate on chocolate yumminess, but also the fact that they’re so so so simple to throw together! But most of all, they bring the happiness by watching how much your family will enjoy them.

Prep Time 10 mins, Cook Time 20 mins, 

Serving 12 to 16 muffins

 

You’ll Need

  • 2 large eggs
  • 2/3 cup sour cream
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 3/4 cup cocoa powder (Dutch process is best)
  • 1 1/2 cups all-purpose flour
  • 1 3/4 cups semisweet chocolate chips

 

What You’ll Do

Prep work … 

  1. Preheat the oven to 425°F.
  2. Line a 12-cup standard muffin pan with paper liners.

Make the batter …

  1. In a large bowl, whisk together the eggs, sour cream, oil, milk, granulated sugar, brown sugar, and vanilla.
  2. Combine in the baking powder, baking soda, and salt.
  3. Add the cocoa powder and whisk to make sure no lumps remain.
  4. Stir in the flour and chocolate chips just until combined. Do not over-mix.

Make the magic … 

  1. Spoon the batter into the liners, filling 3/4 full and dividing evenly among the 12 muffin cups.
  2. Bake for 5 minutes at 425°F, then reduce the oven temperature to 350°F.
  3. Bake until a toothpick inserted in the center of the muffin comes out clean, about 15 minutes longer.
  4. Transfer the muffins to a wire rack and try, just TRY, to not nibble at one of these lovelies.
