Pomegranate Carrot Salad

This is a unique salad that incorporates fruits and veggies and also makes a nice complement to a variety of meals.
You’ll Need
- 4 medium carrots, shredded
- 1/3 cup pomegranate seeds
- 1 Tablespoon scallions, chopped
- 3 Tablespoons lemon juice
- 2 Tablespoons olive oil
- Salt and pepper to taste
Directions
- Combine all ingredients in a mixing bowl, toss and serve.

I actually made this last week! I added very thin sliced onions and raisins since I didn’t have any pomegranate, as well as adding Dijon mustard to the dressing. It was yummy! I served it with pulled pork. Highly recommend!

Dr. Clower, I apologize for posting this here, but didn’t know how else to find you…but just found your “The French Don’t Diet” book. I am so excited to read guidelines on food that more closely parallel the Bible…such as bread being a daily food, and the positive take on milk. I searched for a way to make a type of French bread with a “poolish” (prefermenter) and it has totally changed my bread eating. There are so many crazy ideas out there, but this book is common sense and I am so glad to have found it. Thank you for writing it, and for not being swayed the typical health and medical advice out there that seems so wrong. You don’t have to post this comment, but just wanted you to know.
